RECIPE
Ingredients:
24 medium prawns
4 egg white
1 Tbsp flour
1 Tbsp cornflour + extra for coating
oil for deep-frying
Seasoning:
2 Tbsp soy sauce
¼ tsp salt
½ tsp rice wine/dry sherry
dash of pepper
Method:
- Shell & devein prawns, leaving the tail in tact
- Marinate prawns with the seasoning ingredients for about 15 minutes
- Whisk the egg white to stiff peaks and carefully fold in the flour & 1 Tbsp cornflour gently
- Heat oil in a wok or deep fryer to moderate
- Coat prawns lightly with cornflour, shaking off any excess
- Dip into the egg white batter, coating thickly
- Deep fry several pieces at a time until golden …about 1¼ minutes
- Drain prawn puffs and arrange on a serving plate
