Tomato and Bocconcini Salad

A lovely dish to serve up either as an Appetiser or a light Lunch … I served up with crusty garlic bread 🙂



2 medium tomatoes

250g large bocconcini cheese

bunch of fresh basil, shredded


¼ cup extra virgin olive oil

2 tsp balsamic vinegar

1 clove garlic, crushed

1 tsp castor sugar


  • Slice tomatoes and bocconcini into 5mm slices
  • Layer tomatoes and bocconcini alternatively on serving plate, sprinkle with basil 
  • Combine all ingredients for dressing, mix well
  • Drizzle over layered tomatoes and bocconcini.
