Crab Sticks Salad


A simple but very delicious salad … crab sticks, alfalfa sprouts, rocket & gem lettuce and drizzed with zesty, spicy Italian dressing … nice 🙂 …. a similar crab sticks salad may be whipped up using only the Asian “dou miao”/pea shoots and it is very nice!

Mixed Salad Greens with Chilli Anchovies & Feta Cheese


This can be assembled in no time at all …. I used a pack of mixed green salad leaves + sliced celery + cherry tomatoes + sliced spring onions + sliced button mushrooms and topped with the anchovies in chilly oil + cubed feta cheese … drizzle with some of the chilly oil from the anchovies + sprinkle with some sea salt & freshly ground black pepper … voila, Lunch Is Served!

Mango Salad


One of my all-time favourite salad … normally made with green unripe mango so that you get the crunch or partially ripe if you prefer it to be sweeter … a perfect side/salad with grilled chicken or fish … some people may call this Mango Salsa but to me, if you term it as salsa then the Mango is chopped instead of julienned


Julienne the mango .. I normally don’t do it too fine … this mango here that I use is a tad too ripe but it still taste good  😉


All the ingredients I’d used in this salad … julienned mango, chopped mint, chopped chillies, sliced shallots, a tsp of sugar, a Tbsp of fish sauce (add more if you want it saltier) and juice from one lemon and some added lemon zest if yo so prefer 🙂

Stir-Fried Soya Bean Sprouts

This is soya bean sprouts …. not as popular as mung bean sprouts …. but I love these soya bean sprouts for the extra bite from the bigger beans …. these sprouts are an excellent source of proteins, vitamins and isoflavones …use it in your salad, soup or just simply stir-fried or blanched & toss in some soy sauce & garlic/sesame oil

Here, the picture shows how I simply stir-fried with some spring-oinions, 2 cloves chopped garlic and one sliced red chilly … seasoned with a dash of fish sauce/salt … stir-fry for about 3 – 5 minutes … do not fry for too long as it’ll become limp and lose the crunchiness if overcooked!

Black Beans Salsa

Black Bean Salsa … great served with any seared or grilled fish or chicken … I served it with my Seared Spiced Salmon Steaks 😉

The ingredients for the Black Bean Salsa …. mix all up together with lemon juice, EOO and season with fine sea salt


Ingredients :

½ cup dried black beans, soaked overnight in cold water (may substitute with canned beans)

3 firm, medium sized tomatoes, deseeded and diced

1 red chilli, deseeded and finely chopped (add more if you want more spice)

2 Tbsp fresh cilantro, coarsely chopped

1 medium red onion, chopped

1 Tbsp extra virgin olive oil

juice from 2 limes 

¼ tsp fine sea-salt

Methods : 

  • Drain and rinse the beans in plenty of cold water, put them in a saucepan with enough water to cover and bring to boil rapidly for 10 minutes, then reduce the heat and simmer for further 30 minutes until tender  or for further 15 – 20 minutes if you like a bit of bite in the beans rather then too tender
  • Drain and set aside to allow to cool completely then add to the rest of the other ingredients
  • Mix well and allow salsa to stand, covered, for several hours to allow the flavours to develop

I served these Potato Shrimps with a Avocado, Rocquet & Orange Salad … perfect for lunch ❤
