Crumbed Top Banana Muffins


I luuuurve Banana Muffins/Cakes/Loaf …experimented with all varieties ….finally this version is the best I’ve achieved …these are simple, quick to make and yet so delicious and perfect for breakfast, in-between-snacks, elevenses, t-time snacks … ❤ ❤ ❤


Mix 1½ cups flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp cinnamon and ½ tsp salt in a large mixing bowl ..


Beat 4 mashed bananas, 1/4 cup sugar, 1 beaten egg and 1/3 melted butter in another bowl


Combine handful of oats,  1/3 cup packed brown sugar, 2 tablespoons flour, 1/2 tsp cinnamon in a small bow + 1 Tbs butter l…


…. lightly mix with tips of your fingers until mixture resembles coarse cornmeal


Stir banana mixture into flour mixture just until moistened … spoon batter into prepared muffin cups ….


Sprinkle crumb mixture over top of muffin mixture and bake in pre-heated 375ºF/190ºC oven until golden and tops spring back when lightly pressed, 18 to 20 minutes … do not overbake or the muffins will become dry!
