Ginger Orange Glazed Chicken

This is as delicious as it looks … look at that golden caramelised coating … yumz!

½ cup concentrated orange juice + 3 Tbsp fresh lemon juice + ¼ cup hoisin sauce + 1 Tbsp vegetable oil + ¼ cup sugar

3 Tbsp minced peeled ginger + 3 cloves minced fresh garlic …

Mix the orange juice concentrate, lemon juice, hoisin sauce, vegetable oil, sugar, ginger and fresh garlic altogether

I used one whole chicken, cut into 2 halves … you may use chicken wings or whole chicken legs or chicken thighs or chicken drumsticks or even cut a whole chicken into 8 pieces … it’ll all work well ….

Put chicken in a zip-locked bag, pour in the marinade mixture … seal bag and shake to coat evenly .. refrigerate overnight

Preheat oven to 220ºC …line a large baking sheet with aluminium foil … spread chicken halves/pieces on foil with marinade and bake for 1 hour – 1½ hours, until golden brown & shiny… timing will be dependant on the cuts of chicken used …  transfer to serving platter and garnish with thinly sliced spring onions/scallions

I served up the chicken with some griddle-grilled vegetables of asparagus, zucchini and baby carrots
