Crunchy Cheese Cake

This cheese cake has a crunchy cheese top …the salty taste of the cheese enhances the flavour of the whole cake …making it very deeeeeelish 😉

Separate your egg whites & egg yolks …

Double sift your flour

Grease and line a 22cm cake tin

Grate 100g of Cheddar cheese for the cake + 60g Cheddar cheese for the topping … set aside

Cream butter and icing sugar ….

….. until light and fluffy

Whisk egg white + caster sugar until stiff … then add egg yolks and beat well ….

…then mix butter mixture into the egg white mixture gently

Fold in flour & cheese

Pour batter into prepared cake tin and sprinkle grated cheese evenly over the top and bake in the pre-heated oven for about 30 mins

Straight outta the oven 🙂 … cool in tin for 5 minutes

Lift cake outta tin, peel paper off cake and leave to cool on a cake rack

Slice into squares and serve 🙂

RECIPE

Ingredients:

250g butter

100g icing sugar

5 egg whites

135g caster sugar

5 egg yolks

200g self-raising flour, mixed with 35g corn flour – double sifted

100g grated Cheddar cheese

Topping :

60g grated Cheddar cheese

Methods :

  • Preheat ove  to 180ºC and grease and line a 22cm cake tin
  • Grate Cheddar cheese and set aside 
  • Cream butter and icing sugar till light and fluffy
  • Whisk egg whites and caster sugar till stiff … add egg yolks and beat well
  • Mix in the butter mixture (1)
  • Fold in the flour and grated cheese
  • Pour mixture into prepared cake tin and top with grated cheese
  • Bake in the preheated oven for 30 minutes or until golden brown and skewer pierced into middle of cake comes out clean 
  • Cool cake before slicing into squares and enjoy!
