Slow-Cooked Balsamic Chicken

There are days when I know I’ll be out for most part of the day and it’s days like these when a slow cooker aka crock-pot comes in handy … a ‘live-saving’ kitchen gadget for a working wife or student or busy mom … no need to slave over a hot stove for half a day and yet an equally dee-leee-cious meal can be prepared.  Here’s an awesome yummy recipe … fantastic served with brown rice or baked potatoes or pasta 😉

Slow-cooked Balsamic Chicken served atop egg squid-ink pasta and mangetouts & oyster mushrooms sauté in garlic oil … plate looks a little crowded as this is hubby’s plate with 2 whole chicken legs (boneless) 😉

Mix the 1 tsp garlic powder, 1 tsp dried basil, ½ tsp pepper, ½ tsp salt & 2 Tbsp dried minced onion together and coat the chicken pieces evenly with the mixture

Pour the 1 Tbps olive oil &  4 cloves minced garlic into the bottom of the slow-cooker pot

You will need ½ cup balsamic vinegar

Lay the chicken pieces into pot atop the olive oil & minced garlic mixture and pour the balsamic vinegar over the chicken

Cook on high for 1 hour and then switch to slow and continue to cook for further 3 hours or you may cook on auto for 4 hours if your slow-cooker has an auto setting

I served up with a simple oyster mushrooms + mangetouts sauté in garlic oil and topped with crispy garlic slices …

…. and a generous helping of egg squid-ink pasta to soak up the delicious gravy
