Cheesy Bacon and Egg Slice

misc-en-place for my Cheesy Bacon and Egg Slice 😉 … this is a very versatile recipe where I would say you can add or replace any of the layered ingredients according to your liking

Place bread in single layer in ovenproof dish and then sprinkle with grated cheese

Sprinkle crsipy bacon atop cheese and then top with chopped shallots and green peppers, if using … I omitted the green peppers because I personally don’t like any capsicums/peppers!!

Pour the eggs & milk mixture over and top with chopped red pepper … again, as I don’t like peppers, I had replaced with sliced tomatoes

Hot outta the oven … Cheesy Bacon and Egg Slice … what a pretty sight 😉

Served up with a green salad …. simple, easy & fast to prepare and absolutely scrumptious 😉

RECIPE

Ingredients :

½ loaf unsliced white bread

125g grated cheddar cheese

5 rashers bacon

3 shallots

1 small green pepper (I ommitted this ingredient)

6 eggs

 2 cups milk

1 tsp dry mustard

1 tsp worcestershire sauce

1 Tbsp mayonaise

pepper

½ tsp dried basil leaves

1 small red pepper or 2 beef tomatoes, sliced

Methods :

  • Trim crust from bread and cut bread into 2.5cm cubes and place in a single layer in an ovenproof dish
  • Sprinkle grated cheese atop bread
  • Cut bacon into 2.5cm pieces, fry until crisp and brown … drain and sprinkle over cheese, top with chopped shallots and chopped green peppers (if using)
  • Whisk eggs with a fork in a large bowl, add milk, mustard, worcestershire sauce, mayonaise, pepper and basil
  • Pour over the layered bread mixture and top with chopped red pepper or sliced beef tomatoes
  • Cover dish with plastic food wrap and refrigerate overnight
  • Next day, bake uncovered in moderate 180ºC oven for 50 to 60 minutes
